Weekly Recipe – Fresh Cherries

Cherries from the Flathead and Washington will be popping up more and more over the next month as they ripen. Though they sometimes can be labor intensive to prepare, using fresh cherries in baking and cooking is well work the work.


Summertime Baked Oatmeal

2 cups old fashioned oats

1/4 cup brown sugar (optional, can be delicious without added sugar!)

1 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1 tsp vanilla extract

1 1/2 cup milk or milk alternative

1 egg

1/4 cup unsweetened applesauce

1 cup pitted and halved cherries

3/4 cup blueberries


  1. Preheat oven to 375 degrees F. Grease an 8-inch baking dish or line with parchment paper. Mix oats, brown sugar, baking powder, salt, and cinnamon in a medium bowl.
  2. In a small bowl, whisk together vanilla, milk, egg, and applesauce until well combined. Stir liquid mixture into the oat mixture. Fold in cherries and blueberries.
  3. Spread mixture into baking dish and bake for 20-22 minutes, or until oats are set.

Best served warm as a bar, or topped with milk and fresh fruit.
