Pumpkin Chili

Serves: 8

Ingredients:

  • ½ lb ground beef
  • ½ cup chopped onion
  • 2 garlic cloves, chopped
  • ½ cup chopped green pepper
  • 3-4 cups cooked pinto or kidney beans
  • 1 – 15oz can whole tomatoes
  • 1 – 8oz can tomato sauce
  • 1 – 15oz can pumpkin
  • 1 – 4oz can green chilies
  • 2 cups water
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt to taste

Instructions:

  1. Brown meat, garlic, and green pepper in a large pan. Drain excess fat.
  2. Add remaining ingredients. Cover and simmer for 30 minutes or longer. Add a small amount of water if chili gets too thick.

Chicken Pozole Soup

Serves: 6

Ingredients:

  • 1 whole chicken – skinned and cut into pieces
  • 8 cups water
  • ½ cup chopped onion
  • ¼ teaspoon pepper
  • ¼ cup chili powder
  • 8 ounces canned tomato sauce
  • ½ teaspoon dried oregano
  • 2 – 15oz cans hominy rinsed and dried
  • 3 cups shredded iceberg lettuce
  • 6 lime wedges

Instructions:

  1. Put chicken pieces into large pot and cover with the water. Simmer over medium heat for 1 hour.
  2. Add chopped onion, pepper, chili powder, tomato sauce, and oregano to simmering chicken.
  3. After the chicken is cooked, take it out of the pot and carefully remove all bones.
  4. Return chicken to pot.
  5. Add the rinsed hominy to the pot and simmer for an additional 45 minutes.
  6. Serve with lettuce and a wedge of lime.
